Banana Tofu Pancake Recipe

This Banana Tofu Pancake recipe is so tasty and light. We’ve been making them weekly around here! Tofu in this is an excellent way to up your plant protein while also being a great alternative for anyone dairy-free. This also works for anyone who CANNOT find cottage cheese at the moment!

I find them sweet enough from the banana to not need any syrup, though I love serving them with some chia jam and yogurt. A fibre and probiotic-rich breakfast option.

And they’re a great one for kids because they include 3 out of 9 common allergens, which goes a long way in keeping allergen exposure up! Remember, frequent exposure to allergenic foods can protect against allergies developing.

Deliciously light and naturally sweet, these pancakes might just become a regular part of your breakfast rotation!

Ingredients
  

  • 1 Banana
  • 150 g Silken tofu
  • 3 eggs
  • 60 g wholemeal/ white/ rye flour

Method
 

  1. Mash silken tofu and banana into a bowl

  2. Whisk in eggs
    3 eggs

  3. Mix in flour
    60 g wholemeal/ white/ rye flour

  4. Ladle into preheated pan

  5. Flip when bubbles appear on the surface
