Ricotta Pancakes

Ingredients
  

Wet ingredients
  • 250 g full fat ricotta cheese
  • 4 eggs
  • 1 tbspn caster sugar
  • 250 mL milk
  • 1 tsp vanilla extract or paste
  • 1 tsp apple cider vinegar
Dry ingredients
  • 280 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt

Method
 

  1. Combine wet ingredients
    250 g full fat ricotta cheese, 4 eggs, 1 tsp vanilla extract or paste, 1 tsp apple cider vinegar, 250 mL milk
  2. Add dry ingredients into wet, mix until just combined
    1 tbspn caster sugar, 280 g all-purpose flour, 2 tsp baking powder, 1 tsp baking soda, Pinch of salt
  3. Pre-heat pan on medium heat
  4. Ladle mixture into pre-heated pan
  5. Flip when bubbles appear on the topside
  6. Remove from pan when cooked through (too high a heat and the middle will not cook)
  7. Serve with fruit, butter, and maple syrup
